This has to be something utterly basic, and it's the old problem of forgetting what to do when I haven't used DP for a while. But...

Recording simple MIDI data into a track, outputting and monitoring via a VI.
Set track into record mode and play. All normal:
• audio is as I expect
• in the Mixing Board window, meters respond in both the MIDI track and the VI track
• in the Sequence window, meter responds for the MIDI track
HOWEVER:
• in the Tracks window, no meter/monitor (visual) response
AND:
• when I press Record, all is exactly as above, and nothing records!

Oh, and it's playing back all the stuff I've already recorded just fine.

This applies to every track and every VI. What very, very basic thing am I missing? I'm sure that whatever it is it's going to make me feel extremely stupid!

First, are you in multi-record (individual, device/channelized inputs), or in Any (omni) mode?

In the Tracks Overview, for the MIDI tracks in question; does the input look right? (i.e., not in italics). Have you checked the MIDI monitor to see if the controller (source) is generating data that DP can see?

Are there any input filters active? View filters? Search?

Hard to diagnose without looking at it.

Yes, it's all correct - the inputs are 'live'.

Hmm. Well, as I said, I can hear and see that something's coming in from the controller - everything's absolutely normal until I try recording - so I don't believe that's an issue.

Of course, and even then it would be a challenge.
SO...
I've resorted to what I did once before, which was to create a new project and use the Load command to import first the main sequence, then the V-Rack (sorry - I forgot mention that in my original post that the VIs are all in a V-Rack)... and now it works!
Which means, I assume, that there's corruption of some sort somewhere in the original project.

Anyway, many thanks for your thoughts on the matter, stubbsonic!

I've had a glitch where bussing would stop working, and I'd assume it was user error, until I did as you said and started a new project. I guess the files can get corrupted. I wish DP was better at knowing a file is corrupt.
