I have installed Sequoia, and happily it "seems" to be working.
One question though: Ok, I get the idea/concept of screen mirroring, but what is this new little icon that has appeared in the menu bar for? I'm afraid to click "Change" or "Stop Extending" for fear of screwing something up. Would love to get rid of it (along with the "mic" icon when you open DP.)

If we're talking about the same symbol, a pair of overlapping screens, it just tells you the screen is being shared. It's been there since at least macOS 10.14.
If you click on it, you should be able to disconnect the computer that is sharing the screen, or open sharing preferences on the host Mac. For a lot of things, the preferences include an option to show the status in the menu bar, but I don't see one for this.
And the Mic symbol that tells you what apps have access to the mic, and can hear you, does not appear to have a preference setting. It lets you make some mic settings.
It seems possible there could be a Unix line command to remove one or both of them. There is a thread on the Mic symbol in Apple communities. There seem to be some people who object to it, but I suspect Apple thinks it important to make sure you know someone is listening. Likewise they might think it is important for a user to know someone can see and control their screen.
Don’t click the stop extending. This is some weird thing that started for me after I updated to Sequoia. Might have been when I went to 15.2. I have three monitors, and I turned it off and it was a PITA getting things set up right again.
