Having upgraded from DP8 to DP11, I'm not sure exactly when cc10 lost it's "special" status as MIDI pan. I may have missed it years ago.
It is no longer an easy shortcut in the view filter, or when drawing data in the MIDI window. One must select it from the list of 127 possible cc options on a secondary window.
When did we lose this? Can we get it back with a preference?

You can chose which few parameters appear in the short list (before the little triangle submenu). You do that somewhere in the Preferences. You can rename them and choose colour and shape too in there.

Yes, I do remember seeing that in the manual a while back. I couldn’t find it with a search of the PDF, but I did look in the mini menu as you recommended, and there was continuous data editing preferences.
And just on a lark, I clicked the default button, and pan reappeared. So it really is intended as a default, but somehow that had gotten changed unbeknownst to me.

Is it just me, or do I remember correctly? Didn’t the view filter used to list mini volume and MIDI pan up at the top as separate items?
I don’t remember having to go down to the continuous controller menu to put them on a list.
