Both of these are just Apps, so drag it to your Applications directory (or wherever else you want it) and double-click to start them.
On the server, in the General tab, you'll see it's IP address printed. You should also add a password, and then click the Stop Server button followed by the Start Server button.
While the Redstone server supports Bonjour (very cool), Chicken of the VNC (COTVNC) does not (sigh).
Start COTVNC, on the left side, bottom, add a new connection by clicking the "+" icon.
Name the new connection something (e.g. G5). Then, in the Host field, type in the IP address that is displayed in the General tab on the server. And type the same password you set on the server. Then click the Connect button.
That should do it.

That would be fun! Though, if you have an IP address in the private space (192.168.x.x), then you'll have to give me the IP address that your ISP assigned to you, and you'll have to map port 5900 on your firewall to connect to the private address on your laptop.
If your laptop has an address in the public space, then I should be able to connect to it directly from here.
