Yesterday I returned to a couple of projects which had been underway for a month or so (begun prior to the Universal Audio Installer 1.6.58373 update).
Opened the first project, did some minor editing, played back the results and all seemed well. I Closed the File then selected File Open to move to the next project and DP crashed. Restarted DP and opened the second project, fiddled about a bit then Closed the project and CRASH! Repeated until bored. DP seems perfectly stable other than this errant behaviour when the File menus are accessed. On initial opening of DP all works well but I have to Quit DP and reopen in order to switch project files.
So far I have reinstalled the previous Universal Audio Installer, but the crashing behaviour was unchanged. I've raised the issue with MOTU. It's a nuisance, but I can work round it and the projects themselves are unaffected (unlike the issues I'm having with Logic Pro X - but that's a story for another forum). In passing I will note that swapping files between DP and Logic is very straightforward and simple.
If anyone has any thoughts on other things I can try - deleting Prefs, turning to drink, lying on the sofa and watching daytime soaps - let me know and I'll give it a shot.

Mike
Update: following advice from MOTU Tech Support I trashed various Prefs. The Mac Pro system is now working fine.
The MBP has had two sessions of Pref Trashing. First time resulted in Crash on File Open, File Close and DP Quit. Second session followed a re-install of DP 8.04. DP now crashes on Transport Stop and on Configure Hardware Driver (need to access this as the system defaults to Airplay after Prefs Trash). Probably crashes on other menu items, but I can't get at them fast enough!
