General question recording and theory

Hi all
I would like to ask two questions. I use an UltraLite mk3 together with CueMix FX.

1) Can you recommend a (if possible free) recording software for Mac OS?
2) I would like to understand better how "Send", "Return", the compressor, the leveler etc. work. Can you recommend a book/theory website where these terms are discussed?

I had a bunch a bookmarks. Just google the terms. Mackie manuals are great resources on basic send and returns schemes
