I’m attempting to get my 8pre hooked up to my newly updated Window 7 operating system. Yet whenever I try to uninstall the old drivers I get a message stating that I need the ‘install.dat’ file. I no longer have the install.dat file, it’s not on the installation CD provided by MOTU and I can’t seem to find it a MOTU.com. Does anyone have another solution?

Yeah, I had that same problem too. Fortunately, I had the driver CDROM that shipped with my unit. There was an install.dat file there (with the original driver). I copied it to the same folder as the new driver, and then the new driver installed fine.
MOTU's driver developer should test his work a little more thoroughly. He's letting a few too many obvious bugs get past him.
