Hey everyone,
Does anyone have any pros/cons to leaving a machine running 24/7 or should I shut it down after I am finished using it for the day?

IMHO think green. Turn off.

Main advantage of turning machine off - less power consumption.
Main advantage of leaving it on - Macintosh runs some periodic maintenance routines, some of them in the wee hours. But, you can easily run these routines manually using terminal. (check out "periodic" command)

Be green; turn it off. Save money: turn it off. Leave youself open to transitent spikes 24/7; leave it on.
No real advantage to leaving it on 24/7, IMO.
