Alrighty then... can I add Carl Nielsen?
Why, sure!!

It just so happens that I'm mocking up the strings of Nielsen's Clarinet Concerto in VSL this week.

Why? Because it's a veritable playground of boldness and subtlety that presents great challenges for emulation, requiring more than a casual study of just how real string players approach this work.

I'll see your Nielsen and raise you a Paul Hindemith! :P

+1 for Mussorsky Pictures and orch by Ravel. There is (used to be) a score with the piano below the orch that is very valuable for learning how Ravel rethought the piano. I used this when working with Kent Kennan (also a good book that is updated by Don Grantham). After you absorb the Ravel version, then check out the others to see how they heard it.

I would also suggest Bartok for percussion.

just added that to my collection it is very nice.

the performances that have been grabbing me lately have been Bartok Concerto For Orchestra Fritz Reiner /Chicago Symphony(In Living Stereo)
i always seem to like Reiner w/Chicago Symph
also Stravinsky conducting Stravinsky Columbia Symph. it is really interesting for me to hear the composers interpretations of his own works.
I am not a composer or orchestrator but these are amazing performances as well as great recordings that anyone who wants to hear good examples of classical music should give a listen.
