Hi
I have what I believe is a basic question for you. I do MIDI recording, and currently have a M-Audio Firewire Solo. It has 2 inputs/outputs. I have a Yamaha Motif 7 Synth and several VST synths. I am under the impression that I can record 2 audio channels at a time because I have 2 inputs.
I have been looking at other audio interfaces like the Firewire 1814 which says 18 inputs or the MOTU Ultralite which says 10 inputs. What is confusing me is that I only see 10 ¼••

Input numbers always include Spdif (two) and/or Adat (eight) inputs, when there are any.

Don't forget to count the digital ins and outs. The UltraLite has a total of 10 inputs:
2 mic/gtr inputs
6 balanced 1/4" line inputs
2 SPDIF inputs
The number of audio inputs determines how many signals (mics, guitars, synths, etc.) you can record at once. If you only intend to record two or three inputs at a time (for instance vocal mic and guitar or a stereo synth), then you need an interface with only two or three inputs.
