When I highlite a MIDI track with the I beam tool
and want to freeze it from the drop down menu
the freeze function is greyed out or not active
but if I select all in the edit menu the freeze function becomes active in the drop down menu. Why can't I select an individual track and have the freeze function active?

You cannot freeze MIDI tracks, only audio or VI tracks.

So if I go to the apple software synth choose a VI like Grand piano record a track doesn't it appear as a misi track if not where do I select the VI Sorry for the ignorance but you could hold the key to audio bliss.

The VI tracks should have an associated output track which is in turn assigned to an audio output. THAT is the track that gets frozen, NOT the track containing the actual notes. You might have to select the data track AND the associated audio track, but I think just the latter will do it.

To unfreeze -and this can be a little hard to find in the manual- you need to hold the SHIFT key while selecting "freeze."
