I was checking out Activity Monitor yesterday while working on a project and in the 'kind' column, it said that just about everything to do with the OS is 64 bit. When did this happen? What else have I missed?

Snow Leopard. Almost all of the apps included with OS X are now 64-bit; the only stragglers (if I remember correctly) are iTunes, DVD Player, Grapher, and Quicktime.
Most third-party apps aren't 64-bit yet, save Logic 9.1 and the latest version of Adobe Lightroom, but they'll get there eventually.

Thanks, I must have missed that when I got the new MBP last October. It's a late 2008 and had X.5 on it but PowerMax sent a SL disc with it. Cool!
