Hi Fi Itunes through DP trick
Ok not a trick really but very useful patching. When playing iTunes instead of listening to the output directly try returning a mix back to DP via cuemix (in my case using a Traveler) that includes only the feed from the computer, ie just the iTunes. In DP set up a stereo track to monitor the input of the returned mix. Set up a master with Master Works Limiter inserted and select 24 bit with dither and noise shaping. Assign this to a different output than the default which is being used for the iTunes round trip. You now have a useable digital volume control that sounds great because it is turning 16 bit into dithered 24. Of course you can insert EQ to help your speakers or your room. Try an expander to relieve those over compressed Cds. My favorite and most needed is the polarity reverse. I assign the output to the SPDIF digital out and use a better quality DAC than those built into the interface. This will sound better than using the digital volume control in iTunes and may allow you to replace a preamplifier, many of which have very poor volume controls. Apple lossless or AIFF are great choices.

You can't play notes with it, but you can control (and see) DP or whatever app you want to remotely control.
(The iPhone screen mirrors your Mac screen.)
My piano is upstairs from the workstation, so sometimes I'll use it (with a remote USB keyboard) to visually verify that I'm actually in record.
Not the perfect solution, but one anyway.

I'm using Jaadu VNC for this. It's the best vnc client I have found for the iPhone. I am using ROWMOTE at the moment. It is only $5 and provides mouse and keyboard control over the computer. It is just hard to click on effect bypass buttons by dragging a mouse pointer from across the room.
I started setting up a custom control panel so I can at least make the controls bigger targets.
What I am looking for is a way to set up a keyboard shortcut that could be mapped to a volume control or an effect bypass. Ideally it would effect things the way MIDI can without needing to make the controlled window active. That way iTunes could stay in full screen mode even while the polarity or the volume was being changed in the BG.
Does anyone know of a MIDI controller app for the iPhone?

There's tons of VPN stuff for the iphone (Jaadu VNC) that you can see your monitor and use your fingers to mouse around on the macs desktop to remotely control it.... I just HATE doing that because if I ever lost my phone... but I have the remote wipe etc. but still, the VPN thing is a bit hacker prone.
