Understanding Sample Variations/ Keyswitiching

After working with Mach 5 v2 for the past year, I'm in the process of methodically going through all the samples and pulling out my favorites into new folders categorized by instrument.
I'm now at the VSL instruments, and I'm still a little confused as to how to work with all the variations.
What's the most efficient way to have access to all of the dynamic variations at any given time, or is even possible to have them all loaded?
Does the first sample in each- labeled "all"- contain all the other variation in one patch? Are these triggered by velocity, or keyswitching?
I'd like to have some kind of system for organizing everything easily so I can focus more on developing music and less on the technicalities of sample management.
