How do I record an audio track from a soft synth? (In the past I've only recorded with external mics and instruments, into a mic preamp, into MOTU)

You don't need to, it's already audio when used on an Instrument Track.

I don't understand.

I recorded a performance on a MIDI track.

Then I changed the output of that track to: 'Kontakt 3'

So when I play the sequence, that MIDI track plays back
through K3, which is output to MOTU's analog 1/2.
I hear that output on my monitors. Sounds good.

Kontakt 3 uses a 'track folder' in Sonar, that includes
a synth track and a MIDI track. Neither one can record audio.

In Sonar, on the K3 synth track, there is a visible
waveform 'preview', but there is no recorded audio that
can be played back thru MOTU. Also, when I look at Sonar's
'undo' menu, there is no 'undo record' which shows me that
no recording ocurred anywhere in Sonar.

It's already audio, you don't need to record it. When you do a bounce to disk, it will be included.

You can route the output of the synth to a stereo bus and record that to a stereo audio track.

Not yet Brad, DP6 will include VI tracks in the bounces but for now you have to select your MIDI track and your Instrument track and select Freeze.

You can also bus your VI back to an audio track and record that...

It looks like I figured it out, after pulling all of my hair out.
IN Sonar, You record a track by having the input set to the synth (Kontakt 3) and then yo will see a waveform preview. After recording, you will not have a wave form or track that you can play back. THEN, you must solo that track (synth) and go to EDIT: bounce to track. After bouncing, you end up with
an actual audio track that you can tweak, play back, etc.

After you record a synth track it is sort of in 'Limbo' until you bounce it to another audio track. -Doug

or you can set a new audio track to record from the mix l/r and solo out the synth.

I think I already tried that, but I'll give it another shot. Thanks!
