Is there anything out there that can convert an audio piano track into a MIDI file?

melodyne claims to be able to do this - but I'd bet it depends a lot on the complexity/polyphony.

Digital Performer 4.6 with its Pitch Automation will accomplish this with limits. Works best with monophonic material. Just copy the Pitch Segments and paste them on to MIDI tracks.
