Hello
1: Is it possible to convert the apple instuments (created in MIDI) to audio?
And how do I do that?
2: Does anyone know a good software program for acoustic piano or string ensemble? For use as a plug-in.
Thanks

Hi
You can Record or Freeze Instrument Tracks. Read the DP4.5 manual pages:
-Instrument plug-ins, pages: 813-814.
-Recording audio, pages: 199- 216.
-Freeze selected tracks, pages: 181-182, 485.
Reason is good combination of virtual instruments.
It is not a plug-in. It is ReWire connected with DP.
You can find it here:

Then you can find many VIs also here:

And of course much more elsewhere.

Piano -- people around here seem to like Ivory

String Ensemble -- full orchestra East West Quantum Leap Symphonic Gold worth looking at

Other approach would be to get software sampler like Kontakt 2, which comes with big 15 gigabyte library, including strings and piano. can also add piano or strings library later too.
