some Vinstrument q's

I am new to all this digital computer recording business and I was wondering about a few things:
I use electronic drums when recording. If I record using MIDI i/o can I change the sounds of the drums easily with DP? I would ultimately love to record the drums and replace the drum sounds across the board as easily as possible. If I cant do this in DP what would I need? Can I use drum sample packages to do this?
I am looking to get some Vinstruments to do some basic hip hop stuff (I am a metal guy, but I am planning on starting a studio after I record my CD and get some experience so i'm not familiar with all this) is there any software vinst package out there that will cover most of the bases for me?
Maybe these questions dont make sense or maybe you are smacking your forehead at my ineptitude, but any input/criticism/advice would be awesome!
