Not exactly. chaim is correct. Sounds totally counterintuitive, but once the bounce has been initiated, the Command + H shortcut in the OS is indeed blocked and you can't hide DP. Quite bizarre. Maybe I'll try another method. Might be a question for MOTU. Perhaps the were having such stability issues with bounce they decided it was safest to prevent any other stuff going on? Not sure.

Okay... more info. As I think you suggested MLC, you can indeed using Command + Tab to change to a different app while the bounce is underway. (See movie below.) You can also then invoke Command + Option + H to hide all apps but the foreground app... HOWEVER... they will reappear by themselves in just a couple of seconds as you see near the end of the movie.
The only thing I will add though, is other than aesthetics, if you can in fact switch to other apps and use them during a bounce, what other need would there be to hide DP?

In ML it only happens with the Finder as far as I can see. Apps in full screen mode aren't affected and other apps seem unaffected but I'd have to investigate further which I don't have time for.
HOWEVER.... if DP is in full screen mode, I can switch to the Finder via cmd-tab. DP disappears and doesn't reappear.
So I'm thinking it's a conflict with screen modes of some sort.

Since I found that bounce prevents from 'regular' hiding, I use the dock icon > click+hold, then select hide ...
Doesn't this work with DP8 ?
Here DP 7.24 / 10.6.8

I just tried it. At least on my system and DP 8.05 it hides it for split second and then comes right back.

My 2 cents from my wish list, FWIW:
1) Always-On-Top Option for Plugin GUIs
2) Option to force all new windows to either a specific or the primary monitor (I've got four and it seems that windows always like to open on the 42" on the wall instead of the one I'm working on).
Got a few others, but these would be tremendous to help workflow.

Move DP to another Space. Click and hold the Consolidated Window in DP (as if you are dragging it), then switch to another space using the keyboard command: CONTROL-2, for example. Drop the window in the other space. If you have to do this with all of DP's windows, then use Mission Control. There, you can drag all the windows very quickly, kind of like dealing cards. They'll go to the new space(s) and retain their relative positions.
That should get DP out of the way while bouncing to Disk.

Thanks. Works, but ironically the small bouncing-to-disk window still manages to show it's head even when dp is on a different desktop. Go figure...

I would LOVE this, especially for use with Spaces. Unfortunately, unless Apple has greatly updated the multi monitor API in Mavericks (which I know they have in some ways), that's not possible, even if the developer wanted it to be. I know that in previous versions of Mac OS, we learned that it was impossible for a program to put windows in specific monitors/spaces. Maybe with Mavericks that's changed?
