First off, you are not going from USB to TB3. USB-C is not a protocol; it's a port only that, on a 2017 or later Mac supports a large number of protocols including USB 2 and TB3. You are still connecting USB 2 whether it's through the USB 3 port or the USB-C port. Apple's FW–TB adapter plugged into their TB2-TB3 adapter works but it might be slower since the FW protocol is 400 even though it has B ports associated with FW800. It works fine with my 828mkII and I'm not the only one. Others make it work with the 8pre and 1st gen 828.
There might be a very slight RT difference of one over the other. The only way to know would be to buy the adapters, then ping over a large buffer and compare latency. On paper, USB 2 specs slightly faster than FW400 and real world performance never quite catches up to specs. Also in the real world, there's no reason to believe the differences matter in this case.
