I know it's a kinda dumb question and I probably already know the answer but there is some folk out there that I know have strong knowledge about server and I just want to make sure ....
-> OSX Server and OSX are the same except for the server management capabilities of OSX server right? So it means that any DAW (I use DP and Logic) will run as good on OSX Server as it run on OSX?
It's that I'm considering building a small size server for all the mac I have here at home.

It's a little more complicated than that.
The biggest issue is that Mac OS X server has several features (daemons/services) enabled by default that Mac OS X client does not - which accounts for a higher CPU load. Sure, you could disable the majority of them...but then you have Mac OS X client.
Unless you need features like Access Control Lists or Open Directory you are probably better off buying a Mac Mini for your home server needs.
As well as music, I do web development and that's what I did. I setup a MacMini as a server - enabled Apache, PHP & MySQL - setup file sharing and even use it to feed iTunes to my stereo system (via Airport Express). I enabled VNC on the Mini and use Chicken of the VNC to control the system remotely (it's just plugged in - no display or keyboard).
The only time I would buy an Xserve or install OS X server is if I were serving live websites or managing a large network with centralized user accounts, file sharing, email & calendaring.
All that being said - I wouldn't run any DAW off a server for any reason. Servers are optimized for serving files & data, not hosting DAWs.
