Why would my audio performance monitor choice be greyed out?

No idea, unless you have Audio Off and are running in MIDI only mode.

If you have the Audio Performance Monitor in the Control Panel, then in the side bar tabs it's greyed out. If you can't see it in the Control Panel, you've probably scaled up and it's been scaled off window on the right. Right-click the Control Panel and deselect the AP monitor and it will then be available in the tabs.
