I am thinking of buying Sonar 7 to host the Symphonic and Ethno instruments.
I am looking at the Producer edition and the Home edition.
They are $209 and $500 respectively.
Can I get away with just buying Home edition? Would the Producer edition just give me a lot of extras I don't need? I want something that will do the job well but don't want a massive complex learning curve.
Or, is there any other sequencer out there that would do a better job of hosting than Sonar?

I think that all depends on what you would use Sonar for. It's more of a pro app, especially the Producer Edition. If you just want something to capture your ideas and make some demos, then Home Studioo may work for you.
If you're going to do larger productions with full mixdowns, mastering and video/surround or sound -for -picture stuff, then Producer may the way to go.
That's not to say that you couldn't track and mix a band in HS, but there are more tools in PE.
