Sidecar?

Since I now have compliant devices I thought I'd give "Sidecar" a spin. I've watched countless videos and followed Apple's advice, but it just doesn't seem to work the way it's supposed to. I can mirror, or open a window on my iPad, but extending the screen just doesn't seem to work. All the videos I see show people dragging windows from one screen to another. Am I missing something?

That wasn't the "which one" so I'm assuming the M1 Studio.

Yes, this doc describes pretty much how things operate on my Mac Studio and newish iPad. I guess something has changed since the older videos I've seen were made.
