Apparently, there is a new bluetooth standard. I read that it can get latency down to 25 msec, but this appears to be a theoretical minimum. So maybe still not good enough for monitoring while tracking.
Anyone have experience with this?

The latest I've seen is BT5. I know that's on my iMP and new iPhone 13 Pro.
I see that the usual disappointeds (who never buy because there's something new that Apple doesn't yet support) are complaining that the latest iPhones do not support BT 5.2 so I'll guess that's what you are referring to. Here's a blurb

It looks interesting but I can't find that anyone has adopted it yet. Frankly, I didn't spend much time looking.
