According to my wife, this is big in piano teaching nowadays because of keyboard layout and that using the term is recent but doesn't know who made it a thing. She agrees that skip is larger than a step and has no additional meaning.

The terms appoggiatura and acciaccatura are useful in describing different types of ornamentation, specifically that of the Baroque era.

You’re opening that can of worms?

Appoggiatura were generally not indicated in Baroque music. You were supposed to follow contemporary performance practice which could differ between regions, countries, performers etc. Although this became more formalized later, it survived into the 1920s with Italian opera.

Still, there are accepted practices. “Ladies and Gentlemen, we are playing Handel. The trill starts above the note.”

OTOH, because of the way my brain works, I have analyzed certain things (especially rhythms and harmony) in an almost scientific way, and am able to bring it into my creative life without it "damaging the flower" for me. And I simply wouldn't be able to assimilate those particular bits without using that part of my brain.

No doubt. I have also dissected many musical works to try and find what makes them appealing (to me at any rate). I've stolen more flowers than I've grown. Wait... what? :rofl:
