That's not quite the way it works. When you make a change on one device, the next time you open any other device, you will see the change.

Let's take Calendar and Contacts. I can enter birthdays in Contacts - these automatically populate Calendar now.

My iMac sits at my desk. The iPhone goes with me. The iPad only connects to my home network or a hot spot. I update Calendar on my iPhone at a rehearsal or on my iPad while talking to my wife in the living room. All three devices are updated. Nothing to sync.

Otoh, I use my iPad to play bass live - if away from a network or hot spot, Calendar is blank when I open it but once back at home, Calendar works as before. Since I have my iPhone with me, this isn't an issue.

The past two weeks I have been reinstalling Mt. Lion due to the fact that an update F'd up some of my programs. I was very careful of what I put in for programs this time, it takes some work to get everything set up and working right, but so far it looks as if it was worth it. I also have S.L. on another drive. There are a few things a bit different in M.L., for one, I tried to put just one photo in the side panel that lets you go to a place, or file when you "open" a file, but it appears to only want folders, S.L. lets you put single items there, I find that very useful. But so far M.L. has been very stable, knock on wood.
Mike I think it could be useful to sync my phone, iPad, and computer, but I am on a satellite for the net, and they limit how much data you can use. We just got fiber optics out here, so when my satellite contract is up I am going to it.

Tom, to add an individual item to the Sidebar, hold down the Command key while you drag the file. Another way to add an individual item to the sidebar is to save a search. Use Cmd-F in the Finder and then save the search and have it appear in the sidebar. You can drag it up and down the list of favourites.
