Using undo list as 'working-log' ?
Is there a way to export the undo list as a work-log ?

I'm not aware of a way, but that would certainly be very cool.

Preview could take a snapshot of the window(s). Then save as a PDF and have Acrobat convert it to text. Not elegant but possible, however awkward.

I had always used "Grab" from the utilities folder, (which lives in my Dock) for this purpose. I didn't realize Preview had screen capture built in. Learned a new thing.
Grab has a different workflow, but ONLY saves as TIFF files. Preview offers much more filetypes for saving. I'll need to explore how they differ.

I just use Command-Shift-4, then draw a marquee around what I want to capture. It's a PNG file, not text, but for your purposes that would be fine.

Shift Command 3 dumps the whole screen to a file, and Shift Command 4 gives you a cursor you can use to lasso a piece of the screen. If you press the space bar while the cursor is over a window it will dump an image of the window to a file. There a few free OCR utilities in the App Store that work reasonably well, or at least used to. I was using PDF OCR Community Edition successfully for a while, but it produces rubbish with Yosemite.

Using Preview, the shot stays open. When you save, you can change the file type (usually .pdf for me), rename it and select its destination. Command-Shift-4 would take a lot more time. I'd have to go to the default location, open, rename, sometimes change file type... When I discovered Preview, it turned out to be a major time saver.
