Look up Adjust Beats, Record Beats, and Tap Tempo. Note the difference between Record Beats and Tap Tempo (One non-destructively changes barlines; the other destructively changes tempos). You can also draw it in. There are many ways to go about it.
There's a small discussion about Adjust Beats on page 5 of the Tips Sheet thread. It has a link to a video (the audio may drift; it's an old video long before that kind of thing was standardized) which explains in greater detail how to go about adjusting beats, and it describes a method of using the Conductor Track to help you fill in beats where there are no notes.
Always work on a new copy for that day. My first order of business upon opening a file in DP is to SAVE-AS and give it today's date. That way, I've got every day's progress with no need to worry about messing up anything.
