So, in 7.24, I would just navigate to my v-rack, go to Projects/Add Track and bingo, the new instrument track would show up in the v-rack.
For some reason in DP8, even though I've navigated to the v-rack every which way, the new instruments keep showing up in the main part of the mixing board.
I'm sure I'm missing something here...

Works here. Go to Chunks window, double click on the Vrack so it opens alone in the mixer, add instrument track, it appears in the vrack.

No, that's the thing, I do exactly what you're talking about, and the new instrument track doesn't show up in the v-rack, it shows up in the main mixer window next to all of my mono, stereo and aux tracks and master fader track.

1.- There may be a preference in the mixer mini-menu to allow viewing V-Racks.
2.- When the mixer is opened, click on a little button to the lower left that reads "V" or something like that. It should be next to the track list.
