Is there a way to set the default velocity of notes inserted in the quick scribe editor similar to the drum editor? Default appears to be 64 and would like it to be much higher.

Yea, I didn't find anything like that. Seems like that would be a nice little preference to offer.

Not sure if this is helpful, but...since all of the region commands are available in the QS window, one could conceivably select any or all of the notes, measures, staffs as desired and set the velocity for the entire thing in one shot. That way, it would seem to accomplish the task of establishing the desired velocities in one shot.
Select any or all of QuickScribe (displayed notes).
"Change Velocity" command under the Region window; select "set velocity"

If it is just needed for playback, you can insert a MIDI plug-in in the mixer for that track and put a velocity change plug in there. Put the mode to "Set...."
If you want to do it for tracks en masse, you can option drag that insert to the rest of the tracks. And/or put it in your clippings.
