If you get the G5, you can use your G4 to run the sample instruments, and network the two together. I may end up doing just that... however, I am hoping that if the G5 is fast enough I won't have to do that unless absolutely necessary. I will be connecting the 2 computers with a special KVM switch ...

Has anyone actually tried doing it this way?

i.e. Recording audio using S/PDIF in, and then routing the G5 sound output to an external mixer?

Is this a good idea, or am I missing something?

You can disable the grid, by simply holding down the command key while you are moving the note. It will not SNAP to the grid line, but you can freely SLIP it into place.
