If that's a multicore machine, put each VI instrument in it's own V-Rack. MagicDave says that distributes the load among the cores (or in separate tracks if you;re not using VIs). I don't know about the cc's, but the patch change might be because a default patch is in effect for that track/device. See here:

I have a MOTU PCI-424e audio card with 2408 and 1224 interfaces. On a cloned startup drive, I upgraded from SL to ML 10.8.2. DP 7.24 is working fine so far. I guess it goes without saying, but instead of adding a new MIDI track just duplicate your Garritan MIDI track and change the output to "Wah Pedal : track name : insert x". Then on the Wah Pedal plugin, dial in the Pedal CC# that you want it to respond to--i.e. CC#1 or #7 in your example.

First of all I was wrong. Automation data (ramps, etc.) work fine with the Wah Pedal. Insert Wah Pedal plugin in the audio track to be wah'ed. Then you can draw in the automation data directly in your audio track. Look for automation type "Wah Pedal (pedal position)". Just make sure Wah Pe...
