You can download a reference tune from the Bob Katz website, which is basically a filtered pink noise signal, which you sit at -12dB on your DAW. More importantly than BWAV or AIFF, to be compatible with CD audio, the file should be 44.1k 16bit. If not, iTunes will try and do the sample-rate conversion for you - and you don't want that.

You can get varispeed FX on individual tracks/soundbites using the 'spectral effects' function. The ability (or lack of it) to orchestrate well is going to make much more difference than what DAW you use. The other way is to set up a 'search' preset to select all the expression data in a selection. Then hit delete and re-record the expression for that bit.
